This time, we'll introduce how to make our signature side dish, "Dashimaki Tamago" (rolled omelette with dashi).

Ingredients (serves 2)

  • 3 eggs
  • 50ml dashi stock
  • 1/2 tsp light soy sauce
  • 1 tsp mirin
  • Pinch of salt

Instructions

  1. Beat eggs and mix in dashi, soy sauce, mirin, and salt
  2. Heat a tamagoyaki pan over medium heat and lightly oil
  3. Pour in 1/3 of the egg mixture, and when half-cooked, roll toward you
  4. Add remaining egg mixture in two more portions, rolling each time
  5. Shape with a bamboo mat and let cool

The key is to use plenty of dashi. This creates a light, fluffy texture.
