This time, we'll introduce how to make our signature side dish, "Dashimaki Tamago" (rolled omelette with dashi).
Ingredients (serves 2)
- 3 eggs
- 50ml dashi stock
- 1/2 tsp light soy sauce
- 1 tsp mirin
- Pinch of salt
Instructions
- Beat eggs and mix in dashi, soy sauce, mirin, and salt
- Heat a tamagoyaki pan over medium heat and lightly oil
- Pour in 1/3 of the egg mixture, and when half-cooked, roll toward you
- Add remaining egg mixture in two more portions, rolling each time
- Shape with a bamboo mat and let cool
The key is to use plenty of dashi. This creates a light, fluffy texture.
